Nikki Beach Resort and Spa Porto Heli is seeking for an experienced and talented Sushi Chef to join our Culinary team for the summer season 2026.
Role
Design, develop and evolve menus, including sushi, sashimi, Japanese hot kitchen and fusion elements.
Ensure authenticity, innovation and balance between tradition and contemporary presentation.
Oversee recipe development, tastings, plating standards and premium product selection.
Lead by example in the open-kitchen environment, maintaining professionalism, composure and guest engagement.
Ensure impeccable hygiene, organization and visual standards at all times.
Manage daily kitchen operations, including scheduling, ordering and production planning.
Ensure full compliance with food safety, hygiene and HACCP standards.
Maintain excellence in mise-en-place, knife skills, temperature control and product integrity.
Develop and mentor culinary colleagues, fostering a culture of discipline, creativity and continuous improvement.
Collaborate closely with the Executive Sous Chef and Food and Beverage leadership to align culinary direction with the overall guest experience.
Contribute to seasonal menus, special activations, sustainability initiatives and signature dining experiences.
Requirements
Proven experience as a Head Chef, Chef de Cuisine or Senior Sushi Chef in a high-end Japanese or Japanese fusion restaurant.
Strong mastery of sushi, sashimi, Japanese hot kitchen and modern fusion techniques.
Experience within luxury hospitality and open-kitchen environments.
Exceptional leadership, communication and organisational skills.
Strong understanding of premium ingredients, sourcing and seasonality.
Solid financial awareness with experience managing food cost and kitchen budgets.
Fluency in English.

Education
High school diploma or equivalent; culinary school training is mandatory.
