The Cost Controller is responsible for the independent management of hotel control procedures in alignment with the guidelines set forth in the Wavemaker Hospitality Group.

Cost Control & Financial Analysis

• Monitor and control housekeeping, POMEC, stationery, supplies, food and beverage costs, ensuring alignment with approved budgets and forecasts.
• Prepare daily, weekly, and monthly cost reports, variance analyses, and consumption reports for management review.
• Analyze cost deviations and work proactively with Department Heads and their teams to recommend corrective actions.
• Maintain accurate recipe costing, yield testing, and portion control standards.

Inventory & Stock Management

• Conduct regular physical inventories for all food, beverage, and storeroom items in accordance with Marriott policies.
• Ensure proper stock rotation, storage standards, and par levels across all outlets and warehouses.
• Reconcile inventory counts with system records and investigate discrepancies or variances.
• Monitor slow-moving, obsolete, and high-risk inventory items.

Purchasing & Receiving Controls

• Review purchase requests, purchase orders, and supplier invoices to ensure accuracy, authorization, and compliance with approved pricing and contracts.
• Ensure receiving procedures follow established internal controls and Luxury Collection brand standards.
• Coordinate with Purchasing and Receiving teams to maintain accurate documentation and system entries.

Systems & Reporting

• Maintain and update F&B costing and inventory systems (e.g., Soft One, or similar Marriott-approved systems).
• Ensure accurate menu costing and pricing updates in collaboration with Executive Chef and F&B leadership.
• Support month-end closing by providing accurate accruals, journal entries, and supporting schedules.

Compliance & Internal Controls

• Ensure adherence to Marriott International accounting policies, Wavemaker Hospitality internal control standards, and local regulatory requirements.
• Conduct regular audits to assess compliance with Wavemaker Hospitality policies and procedures.
• Participate in internal and external audits, providing documentation as required.
• Establish and enforce internal controls to safeguard assets and prevent fraud.
• Promote ethical business practices.

Requirements

• University Diploma or Degree.
• Fluent in English (spoken and written).
• Proven experience in setting up and management of Point Of Sales system.
• At least 2-3 years previous experience in cost controlling position.

• Previous experience in a luxury hotel environment is an advantage.
• Positive attitude, strong customer service orientation.
