Head Baker

Responsibilities
• Production of modern viennoiseries (croissants, pain au chocolat, cruffins, brioche, Danish pastries)
• Preparation and management of doughs (sourdough, poolish, levain, preferments)
• Production of high-quality breads (artisan breads, baguettes, sourdough, etc.)
• Laminated doughs – proper butter layering and folding techniques
• Organization and management of the bakery section
• Proper handling of equipment (mixers, proofers, ovens, refrigeration, blast chillers)
• Quality control and consistency of production
• Compliance with hygiene regulations & HACCP standards
• Collaboration with the Pastry Chef
Requirements
• Previous experience in an artisan bakery, hotel or modern viennoiserie production
• Excellent knowledge of dough techniques & laminated doughs
• Ability to create premium products with consistency and precision
• Knowledge of sourdough processes and dough fermentation techniques
• Strong organizational skills, cleanliness, and professionalism
• Ability to work morning and/or night shifts
• Team spirit and responsibility
