SWOT Hospitality is a premier hotel management company, recognized and trusted by international investors, developers, and leading hospitality brands. With extensive expertise in hotel management, investment, development, sales and marketing strategies, as well as advisory services, SWOT Hospitality is currently seeking a Food & Beverage Director for the landmark hotel of Porto Carras in Chalkidiki.

Position Overview:

As the Director of Food & Beverage at Porto Carras Grand Resort, you will lead all culinary and service operations across the award-winning restaurants, bars, lounges, banqueting, and in-room dining. This role is central to delivering the resort’s promise of authentic Greek hospitality, exceptional dining experiences, and world-class service standards.

You will oversee the strategic and operational direction of the F&B department, ensuring profitability, innovation, and guest satisfaction across the diverse dining venues from fine dining restaurants and wine cellars to beachfront bars and large-scale event facilities.

 

Key Responsibilities:

Strategic Leadership

  • Develop and implement the F&B strategy in alignment with the resort’s overall business goals and brand standards.
  • Lead, mentor, and motivate a multicultural team of managers, chefs, and service professionals.
  • Drive innovation in menu development, guest experience, and sustainability initiatives.
  • Monitor market trends and competitor performance to identify growth opportunities.

Operational Excellence

  • Oversee daily operations of all restaurants, bars, lounges, banquets, and in-room dining.
  • Ensure compliance with hygiene, health, and safety regulations (HACCP standards).
  • Implement and maintain SOPs for all F&B outlets to ensure consistent quality and service.
  • Collaborate closely with the Executive Chef, Sommelier, and Events teams to deliver exceptional culinary and beverage experiences.

Financial Management

  • Prepare and manage departmental budgets, forecasts, and cost controls.
  • Maximize revenue through pricing, promotions, and efficient cost management.
  • Analyze financial performance and implement corrective measures when necessary.

Guest Experience & Brand Standards

  • Maintain the highest levels of guest satisfaction, anticipating and responding to guest needs.
  • Champion Porto Carras’ brand values and elevate the resort’s reputation as a premier Mediterranean F&B destination.
  • Oversee guest feedback programs and ensure continuous improvement.

Team Development

  • Recruit, train, and develop top F&B talent with a focus on leadership, service excellence, and career progression.
  • Foster a positive, collaborative work culture that emphasizes guest-centric service and innovation.

Requirements

Qualifications & Experience:

  • Bachelor’s degree in Hospitality Management or related field (Master’s preferred).
  • Minimum 8–10 years of senior F&B management experience in a luxury resort or five-star hotel environment.
  • Proven experience overseeing multiple outlets and large-scale banquet operations.
  • Strong financial acumen and business strategy skills.
  • Excellent leadership, communication, and interpersonal abilities.
  • Fluent in English; proficiency in Greek or another European language is a plus.
  • Passion for gastronomy, wine, and delivering exceptional guest experiences.
