The destination comprises several distinct sites featuring five-star hotels, luxury private residences, a world-class golf experience, and many year-round activities. Costa Navarino is looking for a Demi Chef de Partie. The selected candidate will adhere to hygiene standards and brand guidelines at all times. They will have a thorough understanding of the menu and promptly report any deficiencies or damages to supervisors. The candidate will complete tasks within set quality and time standards, ensuring their work area and refrigerators remain clean and organized.
Responsibilities
- Follows all company policy procedures related to food preparation, receipt, storage and handling
- Full knowledge of the menu, its recipes, its production methods and the presentation of the dishes according to the company's brand standards
- Quality control of raw materials and specifications
- Support and replacement of A cook when absent
- Operation: Presentation and listing of recipes according to brand standards
- Attendance of all trainings and seminars provided by the company and up-to-date knowledge on materials and procedures
- Ability to complete responsibilities correctly and consistently within the time frames we have set for completing departmental goals
- Knowledge and adherence to meal preparation procedures for allergies and dietary habits
Requirements
- At least three years of experience, including an Internship and one year as a Commis Chef de Partie in a five-star hotel.
- Degree from IEK or a Culinary School (2 years).
- Fluent in Greek and English, both written and spoken.
- Strong written and verbal communication skills.
- In-depth knowledge of raw materials, recipes, and presentation techniques.
- Skilled in accurately executing standard recipes with attention to detail.
- Proficient in identifying allergens in raw materials and recipes to ensure safety and compliance.
- Proficient in computer skills, including Microsoft Office (Word, Excel) and internet navigation.
- Experienced in the proper operation and management of kitchen equipment and machinery.
- Familiar with HACCP procedures and proficient in completing necessary forms.
- Skilled in basic cutting techniques and cooking methods.
- Proficient in baking techniques and understanding of cooking grades.
- Capable of managing inventory, warehouse stock, and refrigerators within assigned areas of responsibility.
- Proficient in all essential hot and cold kitchen techniques.
