Role Overview
The F&B Manager oversees the full spectrum of F&B operations—including restaurants, bars, in-room dining, and events—ensuring flawless, consistent service and strict adherence to hygiene, safety, and brand standards. Serving as the hotel’s primary F&B ambassador, drives guest engagement, manages VIP needs, and ensures seamless collaboration across all departments. Works closely with the Executive Chef on menus and concepts, upholds quality across all offerings, and leads revenue, cost, and inventory controls to achieve financial targets. Recruits, trains, and develops the F&B team while maintaining effective communication, accurate reporting, and operational compliance.
Key Accountabilities:
- Manage daily operations of all restaurants, bars, in-room dining, and event spaces.
- Ensure flawless service execution and consistency across all F&B outlets.
- Act as the primary F&B ambassador, engaging with guests throughout service periods.
- Oversee VIP arrangements, special requests, and service recovery with professionalism and efficiency.
- Collaborate with Guest Relations and all hotel departments to ensure seamless, memorable guest experiences.
- Implement and maintain food safety, hygiene, and sanitation standards (ISO 22000).
- Ensure compliance with brand standards, SOPs, and local regulations.
- Work closely with the Executive Chef to develop menus, seasonal concepts, and culinary initiatives.
- Ensure alignment of all F&B offerings with the hotel’s brand identity and guest expectations
- Review quality, presentation, and consistency of culinary and beverage products.
- Monitor revenue, cost control, inventory, and profitability to meet or exceed financial targets.
- Develop and implement strategies to maximize revenue (upselling, menu engineering, promotions).
- Recruit, train, supervise, and motivate the F&B leadership team and service staff.
- Conduct performance evaluations, coaching sessions, and development plans for team growth.
- Ensure clear and effective communication through daily briefings, meetings, and cross-department collaboration.
- Maintain accurate reports, logs, and documentation required for audits and internal controls.
Requirements
- Previous experience as an F&B Manager or Assistant F&B Manager in a luxury hotel, resort, or high-end dining environment.
- Strong knowledge of fine dining service standards, wine and beverage management, and contemporary culinary trends.
- Degree or Diploma in Hospitality, Tourism, or a related field.
- Excellent command of the English language; additional languages are considered an asset.
