W Costa Navarino is looking for a B&F Manager. The B&F Manager will be managing Food and Beverage operation to the highest standards and within budget, implement management systems, administrative policies, and operational procedures to control cost of food, beverage and labor. Monitor service quality within restaurant areas and establish standards and procedures to increase guest satisfaction, value, and profitability.
Responsibilities:
- Manage daily B&F outlets operations, ensuring effective teamwork and communication across different departments and adherence to company policies and SOPs.
- Analyze outlet sales through weekly sales mix reports, in coordination with B&F Analyst. Identify and analyze budget variances, previous forecasts and historical figures while taking into consideration current market needs.
- Maximize outlet revenue, through efficient use of marketing tools. Coordinate with Executive chef towards creative menu creation. Foster good working relationships with vendors to ensure high quality products and reduce expenses without affecting overall guest experience.
- Attract and recruit, with the help of HR department, talents. Train and develop associates through goalsetting, providing information to improve individual performances while retaining focus on customer service quality.
- Ensure all B&F outlets comply with Marriott brand standards, conduct monthly audits within department on brand standards and service quality.
- Coordinate with restaurant managers the weekly roster preparation, based on forecasted weekly covers, in the most cost-efficient manner.
- Gather guest satisfaction information through different platforms. Obtain associate feedback and/or implement service improvement ideas.
- Control all B&F costs, through analyzing sales by sales reports with outlet managers and menu engineering, checking profitability, standardizing recipes and control stock, inventory, and purchase orders.
- Ensure all equipment is in proper working condition and replace when necessary.
- Work with operational managers, EAM, B&F to develop new business opportunities within B&F and to continually work on improving existing operations, to exceed guest expectations.
- Follow all H&S rules, HACCP, hotel policies, SOPs, and Brand Standards at all times. Guide and encourage team to do the same.
- Attend all trainings and seminars provided by the company and continuously remain updated for all trends and market news
