JOB OVERVIEW

Direct the operation of the kitchens, including food preparation and quality, physical maintenance, and inventory functions, to ensure hotel quality standards and revenue goals are met, food and supply costs are controlled.

 

Responsibilities:

  • Follows and implements instructions for the efficient operation of the kitchen
  • Ensures that all ingredients received by stores and suppliers are up to standards
  • Effectively allocates work to subordinates.
  • Maintains consistency regarding the preparation and presentation of all menu items
  • Follows all necessary policies and procedures relating to HACCP guidelines
  • Must be able to follow and implement all company’s policies and procedures.
  • Performs related duties and special projects as assigned 

Qualifications:

  • Proven, continuous experience in a similar role, in a luxury hotel or upscale restaurant
  • Very good knowledge of A La Carte
  • Culinary degree or equivalent qualification from a recognized culinary institute
  • Excellent organizational and time management skills
  • Knowledge of current culinary trends and techniques
  • Available to work nights and weekends
